Pine Ridge Wine Dinner
April 26, 2008 (6:30 PM)

Please call us at (505) 294-9463 for reservations.

Join us for a trip through Napa Valley with the tremendous wines of Pine Ridge Winery!

With an exceptional history, Pine Ridge represents the best of Napa Valley.  Paired with 6 courses of food, this dinner event is not to be missed.

Notes from the winery on their various wine-making procedures:

"The harvest and wine making procedures at Pine Ridge are time consuming, costly, and absolutely necessary in order to craft world-class wines.

NIGHT HARVESTING by hand, to ensure that our grapes (and our grape pickers) don't suffer the ill affects of daytime harvest heat.

CRUSH PROOF TRANSPORTATION, via our small capacity bins, delivers 25 pounds of undamaged grapes.

CLUSTER SORTING of every bin to eliminate matter other than grapes, MOG as it's known in sorting circles.

BERRY SORTING, aka Jack Sorting, a tedious process of inspecting individual berries after destemming to eliminate small bits of leaf and stem. Less than a handful (no pun intended) of Napa Valley wineries employ the tedious, costly and time consuming task of sorting individual berries after destemming.

Berry sorting after destemming It's not enough for us to be selective in our own estate vineyards or on the cluster sorting belt. We take it a step further by having 22 additional dedicated individuals removing tiny bits of stem material, thereby eliminating potentially green aromatics and flavors. We just think red wine should taste red, not green.

HIGH TEMPERATURE EXTENDED MACERATION, a final step to extract seed flavors and tannin.

These painstaking measures - combined with stellar estate vineyards, vineyard managers dedicated to each individual vineyard and sustainable farming practices - ensures that every bottle of Pine Ridge wine showcases the true characteristics of each varietal and the terroir in which it was grown."
